Keep reading to explore some of our favorite food and drink pairings!
1. Al Pastor Street Tacos & a Potion de Azul
We highly recommend trying our street tacos, served with onions, cilantro, and lime on homemade con tortillas. We offer chorizo, chicken, and steak street tacos, but our personal favorites are the Al Pastor or pork. We marinate pork shoulder in pineapple and chili sauce, then roast it until juicy and tender. To go along with your tacos, the Potion de Azul is a great choice. This one-of-a-kind cocktail contains Bacardi rum, island punch, frozen blueberries, orange, lime, and pineapple juices and is served with dry ice for an amazing flourish!
2. Tres Carnes Fajitas & a Spicy Mexican Mule
If you like a bit of spice in your cocktails, then you’ll love our Spicy Mexican Mule, made with our own special spicy tequila, lemon, and ginger beer. We think this drink pairs wonderfully with the Tes Carnes Fajitas. You get a plate of wood-fired chicken, skirt steak, and grilled shrimp served with our unique Azul seasoning and Mexican butter, as well as all the fixings for fajitas.
3. Ribeye a la Brasa & The New Fashioned
If you want to splurge on a phenomenal steak, try our Ribeye a la Brasa! We grill a 12-ounce ribeye on a wood-fired open flame, top it with chimichurri, and serve it with grilled onions, roasted jalapenos, charro beans, and potato wedges. Our twist on an Old Fashioned goes perfectly with the steak. We use bourbon, mezcal, aromatic and orange bitters to create a delicious cocktail we know you’ll love.
4. Green Chili Enchiladas & a Flavored Margarita
Another delicious food and drink pairing is the Green Chili Enchiladas and a refreshing margarita! We make our green enchiladas with shredded chicken wrapped in corn tortillas and then topped with lime crema, green chili sauce, and melted cheese. They’re served with rice, lettuce, guacamole, and sour cream. Our margaritas are definitely what our rooftop bar in Pigeon Forge is known for, and you can choose from a variety of tequila options, and flavorings such as watermelon, blackberry, kiwi, mango, and strawberry, and even opt for a frozen or spicy drink! Perhaps the best way to enjoy our margaritas is by ordering a flight so that you can try several different flavors and combinations.
5. Tres Leches & The Horchata InJunction
Of course, we had to include a dessert and cocktail pairing! The Tres Leches is by far our most popular dessert, and we recommend pairing it with one of our most underrated drinks, The Horchata InJunction. The warm vanilla and caramel flavors of the flan complement the cocktail ingredients- Junction 35 cinnamon whiskey, vanilla liqueur, and homemade horchata. This combo is the best way to end your meal!
